Cabbage is high in Vitamin K1 (this needs to be converted to K2 in your body) andantioxidants, especiallyVitamin C!
Fermenting cabbage increases the Vitamin content and provides friendly gut bacteria, or probiotics! Try this sauerkraut recipe- you can do this with white or red cabbage, and add any of the vegetables listed below for some fun flare.
Cabbage is a cruciferous vegetable like broccoli, Brussels sprouts, cabbage, cauliflower, kale, and kohlrabi. These vegetables are full of nutrients, however, they can be hard to digest for some people and I recommend cooking or fermenting them in order to ease digestion and allow your body to take advantage of thier nutrients more easily.
Cabbage is anti-inflammatory and rich in the popular polyphenols, especially red cabbage!
Cabbage goes well with any combination of the following:
- carrots
- onions (red, white, yellow, spring onions)
- cumin (seeds or powder)
- cilantro & lime
- bell peppers (don't cook these as long as the cabbage)
- tumeric
- ginger
- garlic
Cabbage Fajitas Recipe
1 large onion (red or yellow)
1/2 head of cabbage (red or green)
2 bell peppers (orange, red or yellow)
1 lb boneless chicken or steak
1/2 tbs chili powder
1 tsp cumin
1/2 tsp salt
2-3 cloves garlic, minced/pressed
one lime
2 TBS lard, ghee or coconut oil
If you can, it's great to get these all started in marinade a few hours to one day before you cook.
Slice the veggies to similar sizes. Cube or slice chicken as well. Mix all of this together with the spices and zest of one lime. If you have time to marinade, you will want to squeeze the juice of one lime over everything and refirdgerate in a sealed container.
When you're ready, heat up a big pan to medium and melt your fat in it.
Add your marinated/spiced veggies and meat and stir occasionally
squeeze 1/2 lime over this
serve with chopped cilantro and avocado or GAPS sour cream. tortillas optional
